What kind of cheese is used at the 99 Restaurant for Cheese and Crackers ???

The cheese and crackers are so good. I can't satisfy my hunger cravings because I can never find the right cheese to eat with my wheat thins. The cheese is some sort of cheddar with little white chunks in it. I need to know what kind of cheese this is so I can buy a huge tub of it and eat it all day. Thank you!
